Apple Pie Oatmeal

So, who's excited for fall? This girl definitely is! Hockey season, fall foliage, holidays, and pumpkin flavored everything. I've been pinning pumpkin recipes like it's my job. In fact, I just stumbled across a Pumpkin Snickerdoodle recipe. How amazing do those look?! I'm forcing myself to wait until September 22 (the first day of autumn this year) before I make anything pumpkin. So until then, I'll indulge in other fall-esque foods, like this Apple Pie Oatmeal.

Picking the right apple is key in making apple pie, or this Apple Pie Oatmeal. When making this recipe, I used Ginger Gold Apples, which are a firm apple that have a good combination of tart and sweet flavors. Use your discretion when picking the type of apple, but aim for a firmer variety so that the apple slices don't turn to mush when you bake or saute them.

This Apple Pie Oatmeal definitely hit the craving-fall-food spot. The warm, sauteed apples are covered in a cinnamon, butter sauce that smells divine and tastes even better. Pairing the warm apples with healthy and filling oatmeal is the perfect combination for a nutritious and satisfying breakfast.

Apple Pie Oatmeal
(1 bowl)

1/2 cup quick oats
3/4 cup water
1/4 cup unsweetened applesauce
1/4 tsp vanilla extract
1 pat of butter
1/2 of an apple, cored and cut into thin slices
1-2 tsp brown sugar
1/4 tsp cinnamon
dash of nutmeg
Granola, cinnamon, and brown sugar to garnish

Add oats, water, and applesauce to a microwave safe bowl. (If you want your oatmeal to have lots of apple flavor, use 1/2 cup water and 1/2 cup applesauce.) Microwave on high for 2 minutes. Remove from microwave and stir in vanilla extract.

Meanwhile, heat a saute pan over medium heat. Add butter and let melt. Add apple slices, brown sugar, and cinnamon. Saute for 4-5 minutes, or until apples are tender.

Top prepared oatmeal with sauteed apples. Garnish with granola, cinnamon, and/or brown sugar. (I ran out of granola so my picture doesn't show any. Adding granola would be great for some texture and a little more sweetness.)

    Just tried this recipe this morning and we thought it was delicious. To add more flavor I did as you suggested (1/2 c. water, and 1/2 c. unsweetened applesauce). It was so much more filling than a packet of oatmeal! I didn't realize the options you had with plain oatmeal!

    I have been enjoying reading your posts and I look forward to trying new recipes!

  3. I generally just chop up half an apple and cook it with my oatmeal. I like the McCanns 5 minute oats. This looks so good with it sauteed!

    1. I've never tried McCanns oats before. I'll have to check those out! And I'll have to cook the apples with my oatmeal next time. Haven't tried it that way yet! Thanks for the tip :)
