With summer coming to an end, I'm having to say goodbye to my outdoor concert venues. The summer of 2012 has been the summer of concerts for me-I've gone to nine concerts so far and might have one or two more I'll try to sneak in. I sure do love my live music!
One of the many things I love about concerts is tailgating. Bringing
good food and cold drinks and hanging out with friends before a concert
has fun times written all over it. This past weekend I went to the Luke
Bryan/Jason Aldean concert outside of D.C. and decided to treat my
friends to this Brownie Batter Dip. The entire container was wiped clean
by the end of the night.
And it is no surprise because this dip is seriously addicting. This rich and creamy concoction is a mix between chocolate cream cheese frosting and brownie batter. The tartness from the cream cheese keeps the dip from being too sweet. But if you crave sugar like it's your job, add more sugar until it's to your liking (add more powdered sugar for a flavor similar to frosting and more brown sugar for a flavor similar to brownie batter). The addition of flour gives this dip a batter-like consistency and flavor, which is perfect for achieving that guilty pleasure you experience when you lick the beaters after making a batch of brownies.
This dip is perfect for tailgating, but is also great for entertaining in any setting. It is easy to transport and can be served with a variety of different dippers. The next time you find yourself looking for a sweet, crowd pleasing recipe, give this Brownie Batter Dip a try!
Brownie Batter Dip (adapted from Mel's Kitchen Cafe)
(makes about 3 cups)
8 ounces reduced fat cream cheese, room temperature (you could use regular or
fat-free)
3 Tbsp unsalted butter, room temperature
2 cups sifted powdered sugar (sift before measuring)
5 Tbsp all purpose flour, sifted (sift after measuring)
7 Tbsp cocoa powder, sifted (sift after measuring)
3 Tbsp packed brown sugar
1 tsp vanilla
2-4 tsp milk
Add cream cheese and butter to a large bowl. Beat with an electric mixer for
1-2 minutes, or until light and fluffy. Add powdered sugar slowly. Mix
ingredients together until powdered sugar is well incorporated. Add flour, cocoa
powder, brown sugar, vanilla, and 2 tablespoons of milk to cream cheese mixture.
Mix until batter is fluffy and all of the ingredients are incorporated. If
batter is too thick, add 1 tablespoon of milk at a time until desired
consistency is reached. Refrigerate for at least 30 minutes before serving.
Serve with pretzels, graham crackers, and/or strawberries.
