This post will have a slightly different feel compared to my other posts. I'm not going to describe how wonderfully rich and fudgey these brownies are-just look at the pictures and you can tell-but instead I'm going to encourage you to take time for what is important. We so often neglect certain people, events, and things because we don't have time right this second and think we'll get around to it later. But what if there is not a later? Stop putting off what is important and do it now; whether that's giving your loved ones an extra hug, applying for that job or program that you've been going back and forth about, going on a trip that you've been dreaming about, or getting the courage to be open and honest to a friend, family member, or loved one about something that you've been thinking and feeling for a while but can't find the right opportunity to bring it up....whatever it is, don't wait. Seize the moment and make the most of it, because you never know what tomorrow will bring.
(about 30 brownies)
1/2 cup unsalted butter
1 1/2 cups semisweet chocolate chips
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/4 tsp salt
2 eggs
1 cup all-purpose flour
1 cup milk chocolate chips
1 cup dark chocolate chips
30 Junior Mints
Preheat oven to 350. Lightly spray a mini muffin pan with cooking spray.
Place butter and semisweet chocolate chips in a large pot. Heat over medium heat, stirring constantly, until melted. Add granulated sugar, brown sugar, and salt and stir until mixed and sugar is dissolved. Add eggs, one at a time, stirring after each addition. Add flour and mix until just incorporated, careful not to over mix. Fold in milk and dark chocolate chips.
Fill each mini muffin hole half full. Bake about 20 minutes, or until toothpick inserted in center of brownie comes out clean. (This time will vary slightly depending on the size of the mini muffin pan you use. Check brownies after about 15 minutes.) After brownies are done, remove them from the oven and gently press one Junior Mint in the center of each brownie. Let brownies cool completely in the pan before storing in an airtight container.

Elaine, these look super delish! I have always loved Junior Mints--as a kid, they were my "smuggle into the movie theatre candy of choice" :) putting them into adorable, portable brownie cups is genius!

I hate that such tragic events need to happen to remind us about what is important and what to be thankful for, but sometimes having those reminders is exactly what each of us needs to get back on the right track.
