Apple Crisp for One

I present to you one of the easiest, quickest, single serving dessert recipes I've made to date. Not to mention that this dessert can be considered "healthy" since it has fresh fruit in it. Well, that might be a stretch since it is topped with fabulously sweet and crunchy streusel, but just work with me.


This Apple Crisp recipe is a sure winner. With a simple list of ingredients and minimal prep work, you can satisfy your sweet tooth in less than 30 minutes. Peel and chop up your favorite apple variety (I used Pink Lady...so crisp and delicious), mix up a quick streusel, and pop your very own bowl of apple crisp goodness into the oven to bake.


The smells you'll experience while this dessert is baking are out of this world. Even though it is nearing summer, I was immediately reminded of fall and the warming scents associated with that time of year. It's nice to trick your taste buds and have a little fall food in the dead of spring. I might just make a pumpkin pie this weekend to continue this trend.


As soon as the crisp has cooled enough for you to eat, you will be in apple heaven. I ate my apple crisp plain (still keeping in mind that Memorial Day and bikini season is less than a month away-eek!), but it is absolutely wonderful with a big scoop of vanilla ice cream or a huge mound of freshly whipped cream. If you are craving a little fall in your life or just want a dose of apple heaven in a jiffy, you must try this Apple Crisp!

Apple Crisp for One
(1-2 serving)

1 large apple, peeled and chopped into bite size pieces*
2 Tbsp brown sugar
1 tsp all-purpose flour
2 Tbsp oats (regular or quick cooking)
1/2 tsp cinnamon
2 Tbsp unsalted butter, melted

Preheat oven to 350 degrees. Lightly spray a ramekin or bowl with cooking spray.

In a small mixing bowl, combine the brown sugar, flour, oats, and cinnamon. Add the melted butter and stir until ingredients are combined. Place the apple pieces in the prepared ramekin; top with crumb mixture.

Place the ramekin on a cookie sheet and put in the oven. Bake for 15-18 minutes, or until the apples are soft and the crumb mixture is crunchy and golden brown. Cool for 10 minutes before eating.

*I used a Pink Lady apple. These are by far my favorite variety because they are firm and crisp with both sweet and tart flavors. Feel free to use your favorite kind, but I highly recommend Pink Lady apples or any other firm apple.

-High in fat per serving (you can try using butter substitute to make this healthier)
