Basic Stir Fry

This is one of my standard week night recipes. I usually don't get home until 6:30 and am starving, so the last thing I want to do is spend a lot of time in the kitchen; the first thing I want is a very quick and satisfying dinner. This Asian stir fry is just that.

Using frozen vegetables and ingredients that you already have in your pantry and refrigerator, this dinner is ready to eat after a quick 10 minutes. This recipe is also extremely versatile-add chicken or shrimp, serve it over rice, use different vegetables or fresh vegetables that are in season, add different ingredients to the sauce depending on what you have or what you feel like eating that night...the possibilities are endless. And to top it all off, this recipe is low in calories, has virtually no fat, and has 5 grams of fiber per serving. Delicious, satisfying, and good for you. Now go grab your wok and try this stir fry!

Basic Stir Fry
(Serves 2)

1 bag frozen stir fry vegetables
2 Tbsp flour
2 Tbsp low sodium soy sauce
6 Tbsp water
1 tsp minced garlic
1 tsp spicy brown mustard
4-5 splashes hot sauce
salt, pepper, and garlic powder to taste

Heat wok (or skillet) over medium heat. While that's preheating, microwave vegetables for 2-3 minutes so they are not completely frozen. Spray wok with non-stick cooking spray. Add vegetables. Season with salt, pepper, and garlic powder, and saute for a few minutes.

For the sauce, combine flour, soy sauce, water, garlic, mustard, and hot sauce. Whisk until there are no more clumps of flour. Add sauce to vegetables. Saute, making sure to cover vegetables. Keep cooking over medium heat until sauce thickens. Garnish with edamame and serve immediately.
