Blueberry Muffin Oats
(Serves 1)
1/2 cup quick oats
1/2 cup unsweetened vanilla almond milk
1/2 cup water
1 packet stevia (or other sweetener of your choice)
1/2 tsp cinnamon
2 tsp brown sugar
1/4 tsp vanilla extract
1/2 cup fresh blueberries
Slivered almonds to garnish
Place oats, almond milk, water, stevia, and cinnamon in a microwave safe bowl. Microwave for 2 minutes. Stir in vanilla extract and brown sugar. Fold in 1/4 cup blueberries. Top oatmeal with remaining 1/4 cup of blueberries and slivered almonds.
