Fluffernutter Cookies

Fluffernutter sandwiches are God's gift to humans. I grew up eating fluffernutter sandwiches daily. When I saw this cookie recipe on Picky Palate, I knew I had to try these. With only three ingredients and a total prep and bake time of less than 30 minutes, these cookies sound perfect.  


While these cookies are very easy to make, I am somewhat disappointed in the outcome. The texture of the cookies are great-soft and chewy on the inside and crunchy on the outside. But the flavor is nothing like the fluffernutter sandwich that I love. The cookie literally tastes like eating a spoonful of peanut butter. While this might be appealing to some people, it is not the taste I was hoping for.



My Mom had the idea of sandwiching marshmallow fluff in between two cookies, which would add more marshmallow flavor and a bit of sweetness to these otherwise bland cookies. Or, if you decide to make these, you could try adding some sugar and vanilla to the cookie dough to add a bit of sweetness and flavor. Or, you could just stick to the basics and make a fluffernutter sandwich.

Fluffernutter Cookies
(16 cookies)

1 cup smooth peanut butter
1 egg
1 cup marshmallow fluff

Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.

Add peanut butter and egg to a large mixing bowl. Mix until well combined. Fold in marshmallow fluff. Do not fully mix in fluff; you want to see streaks of fluff throughout the dough. Drop tablespoon size cookie dough on prepared cookie sheet. Bake for 12-14 minutes. Be careful not to over bake; these cookies are done when they start to turn light golden brown. Let cookies cool on the cookie sheet for 5 minutes. Remove to cooling rack and cool completely.

Pros:
-Quick to make (prep and bake time is less than 30 minutes)
-Very easy to make
-Minimal ingredients 
-Soft and chewy texture

Cons:
-Not very sweet (next time I will try using honey roast peanut butter and possibly adding 1/2 cup or so of granulated sugar)
-Crumbles easily
-The taste and after taste of this cookie is very similar to eating a spoonful of peanut butter (this could be a pro or con depending on who you talk to)
