Mini Turkey Meatloaves

I've always had a love/hate relationship with meatloaf. Ever since I can remember, I've loved my Dad's homemade meatloaf but hated every other meatloaf I tried. I'm not sure if it was all in my head or if there are certain ingredients that are commonly used in meatloaf recipes that I don't find appetizing, but I've made it a point to avoid meatloaf.

When I came across Sugar Free Mom's mini meatloaves on Pinterest, I thought I would give meatloaf another chance. I jazzed up her recipe by adding more seasonings and garlic, as well as topping each mini meatloaf with ketchup. And to my surprise, I actually liked how these turned out. They remind me a lot of a turkey meatball. While I'm not going to say that my love/hate relationship is now all love, this recipe definitely convinced me that I don't have to avoid meatloaf any longer (as long as my Dad or I make it, of course!).

Mini Turkey Meatloaves
(10 mini meatloaves)

1 lb. 94% lean ground turkey
1 egg
1/4 cup unsweetened almond milk (or skim milk)
1 clove garlic, minced
1 Tbsp Italian seasoning
1/4 tsp pepper
1/2 tsp salt
1/3 cup Italian bread crumbs
1/4 cup grated Parmesan cheese
1/4 cup ketchup

Preheat oven to 350 degrees. Spray a muffin pan with cooking spray.

Put all ingredients in a bowl; mix until just combined. Divide meatloaf mixture into 10 mini meatloaves and place into muffin cups. Top each mini meatloaf with 1 tsp ketchup.

Bake for 35 minutes. Serve warm.

Pros:
-Easy to make
-Easy clean up
-Freezes well
-Great leftovers for lunch the next day or dinners later in the week (dinner idea: chop the leftover meatloaves into quarters and serve as turkey meatballs over pasta)

Cons:
-Slightly dry (to avoid this, use ground turkey with a higher fat content)
