Salmon Patties

As I've said before in this post and this post, I like quick and easy dinners. When I'm just feeding lil ol' me, I don't need anything fancy. As long as it tastes good and I don't have to slave away in the kitchen, I'm happy.


In my search for more quick and easy dinners, I came across the Healthy Intuition blog with two simple dinner recipes: tuna patties and salmon patties, each with their own sauce. I decided to go for the salmon patty recipe, tweaking it based on my own preferences and what I had on hand, and I'm happy with the results. The first time I tried this recipe my patties were starting to fall apart, so it's important to make sure the bread crumbs, oats, and onions are all finely chopped so that they blend nicely with the other ingredients. I didn't try the maple-mustard sauce that goes along with the patties because I wasn't in the mood for a sweet sauce, but visit Healthy Intuition if you'd like to see the sauce recipe. Overall, this is definitely a winner for a quick and easy dinner and I plan to make this again soon.

Salmon Patties
(5 patties)

6 ounces canned salmon, drained
1/4 cup bread crumbs
1/4 cup oats
1 Tbsp Italian seasoning
1/3 cup finely chopped onion
1 tsp minced garlic
salt and pepper to taste

Add bread crumbs and oats to a food processor; process until finely ground.

In a mixing bowl, add all of the ingredients. Mix with hands until everything is well combined. Form into 2 inch patties.

Heat skillet over medium heat. Spray with cooking spray. Add patties to preheated pan. Cook for 3-4 minutes, or until golden brown. Flip, and cook another 3-4 minutes.

-Great leftovers; eat warm or cold, on top of a salad, in a wrap, or by itself
-Versatile- use different fish or chicken, add different seasonings

Cons:
-No huge wow factor
