This might be the best, low-fat brownie I have ever tasted. No joke.
These brownies are so rich and fudgey that no one would ever guess that they
only have 120 calories and less than 7 grams of fat per serving. AND
they have peanut butter in them!
If you don't believe me, ask any of my friends who devoured these last weekend. Bottom line: this recipe is dynamite. The only change that I made to the
original recipe, which I found on Sally's Baking Addiction, was reducing the peanut butter. I know, this sounds like I'm crazy. Who wants less peanut butter?! But I found that the ratio of brownie to peanut butter was a little off, so I reduced the 3/4 cup of peanut butter that the original recipe called for to 1/2 cup. But if you are a serious peanut butter fanatic, try it with 3/4 cup. Either way, these brownies are a huge hit and no one has to feel bad for eating one, or two, or five.
Skinny Peanut Butter Fudge Brownies
(Serves 9-12)
6 ounces fat free vanilla greek yogurt
1/4 cup unsweetened vanilla almond milk (or any other type of milk you prefer)
1 tsp vanilla extract
1 egg
1/4 tsp salt
1 tsp baking powder
1/2 cup Domino Light sugar (or 1 cup regular granulated sugar)
1/2 cup unsweetened cocoa powder
1/2 cup old fashioned oats (not quick oats)
1/2 cup creamy peanut butter
Preheat oven to 350 degrees. Spray an 8x8 baking pan with cooking spray.
Add all of the ingredients, except the peanut butter, to a blender. Blend for 30 seconds, or until the ingredients are well incorporated. Pour this batter into the prepared baking dish.
Put peanut butter in a microwave safe dish. Microwave for 20 seconds, or until peanut butter is slightly melted. Drop peanut butter into brownie batter. Swirl with a knife to create a marbled look.
Bake for 20 minutes, or until sides start to pull away from the edges of the pan. Cool completely before cutting.

-My brownies had small bubbles that came up while they were baking (not sure if this is from the blending [which adds a lot of air into the batter] or if something is wrong with my baking powder)
