Triple Chocolate Cookie for One

Is there anything better than a dessert made for one? Take a cupcake, for example. That cupcake is all yours. Every cake crumb and gram of frosting has your name, and your name only, written all over it. No need to feel guilty about hogging the cupcake because it is a single serving made just for you. If you catch someone eying your scrumptious (insert your favorite cake here) cupcake, you can kindly point them in the direction of the cupcake stand and continue to enjoy your special cupcake. Slightly possessive? When it comes to sweets, I completely support hyper possessiveness.


Much like a beloved cupcake, this giant triple chocolate cookie will turn you into an aggressive possessive. This recipe, which can be made into four regular size cookies or one XXL cookie, makes one of the most sinfully decadent chocolate cookies I've ever eaten. These cookies are certainly not for the faint at heart. If you love chocolate, adore your sweets, and don't like to share, you have come to the right place.

As a fun side project, my dad and I have teamed up to create our very own blog: Reading and Recipes. The concept of this blog is to provide delicious and simple dessert recipes that are intended for one person, while offering entertaining pieces of fiction for the visitor to listen to or read. So, you get your sweet fix and reading fix all while enjoying a little R&R. I bet you can't guess who the baker behind Reading and Recipes is! And, obviously, I leave the pieces of fiction, short stories, and novels up to my brilliant dad. He has some pretty impressive pieces, let me tell  you.

Triple Chocolate Cookie for One (adapted from Sally's Baking Addiction)
(1 large cookie, or 4 cookies)

2 Tbsp unsalted butter, room temperature
2 Tbsp granulated sugar
2 Tbsp light brown sugar
2 Tbsp egg substitute (or crack one egg, whisk it, and use 2 Tbsp)
1/2 tsp vanilla extract
1/4 cup all-purpose flour
2 Tbsp unsweetened cocoa powder
1/2 tsp baking soda
pinch of salt
2 Tbsp semisweet chocolate chips (or your favorite candy)
2 Tbsp dark chocolate chips (or your favorite candy)

Preheat oven to 350 degrees. Line a cookie sheet with a nonstick mat or parchment paper. Set aside.

Add the butter, granulated sugar, and brown sugar to a mixing bowl. Mix with a fork until ingredients are combined. Add the egg and vanilla extract, and combine all of the ingredients. Add the flour, cocoa powder, baking soda, and salt and slowly stir ingredients together. Fold in both kinds of chocolate chips.

To make one large cookie: roll the dough into one large ball and place on your prepared cookie sheet. Dot the top of the cookie dough with a few more chocolate chips. Bake the cookie for 14-16 minutes. Do not over bake! The cookie will appear soft and undercooked, but it's done. Remove cookie from oven and let cool on cookie sheet for 10-15 minutes before eating.

To make four cookies: divide the dough into four equal balls and place on your prepared cookie sheet. Dot the top of the cookie dough with a few more chocolate chips. Bake the cookies for 8-10 minutes. Do not over bake! The cookies will appear soft and undercooked, but they are done. Remove the cookies from oven and let them cool on cookie sheet for 10-15 minutes before eating.

Okay, call me cray-cray but most of the time, I can bypass chocolate no problemo --I really love my salt instead :) but there are those times when I am DYINNNGGG for something SO outrageously chocolatey and THIS cookie is PERFECT for those times! A single serving, ultra chewy and gooey chocolate cookie--hello, get in my face!

  8. Tried this recipe last night and it was GREAT! And the quarter or so I had left (didn't want to be a total oinker and eat it all in one sitting) was just as good this afternoon--crispy on the outside but still chewy and decadent on the inside. A real winner (and so easy)!
