Lemon Poppy Seed Muffins

Do you have a favorite muffin recipe? Blueberry, bran, honey wheat, chocolate chip, cinnamon swirl...the list goes on. I used to think I was a blueberry muffin girl through and through, but I'm slowly beginning to realize that my favorite muffin changes about as often as the weeks change. Right now my favorite are definitely these Lemon Poppy Seed Muffins.


Clean Eating Strawberry Banana Muffins

Omgosh I didn't think this day would ever come. Last night I wore my first sundress of the season. WITH flops. Yes. It was just days ago that I was wearing my Northface jacket, jeans, and long sleeves; thank the weather gods for finally giving us some warm weather and sunshine. The temperature is expected to reach close to 90 degrees in the DC area tomorrow, so we might just skip right over spring and go straight to summer--you won't hear any complaints from this girl. As long as I get to wear my dresses and flops, I'm happy happy.


Brown Butter Oatmeal Scotchies Muffins

Browning butter is very much the "in" thing for bloggers and foodies to do. Everywhere I look, I'm seeing blog posts and recipes that call for brown butter. It's hard to argue why it is such a popular ingredient because it makes cookies/cake/muffins/treats taste ten times better than regular butter does. Since I do consider myself a foodie, I figure it's only appropriate for me to jump on the bandwagon; what better way to start than with these muffins?


Skinny Chocolate Biscoff Muffins

We finally had a sunny, warm weekend in D.C., and I couldn't have been happier. I was finding any and every excuse to be outside and soak up some sunshine. Naturally, frozen yogurt was on that list of excuses; so was walking to Trader Joe's, strolling through Clarendon to window shop, and meeting friends at our standard spot to enjoy a few drinks on the patio. To say that I was ready to throw on my bathing suit and welcome spring with open arms is an understatement. Anddd here we are, two days later, experiencing dark, rainy, dreary weather. Guess I'll keep my bathing suit in my closet and beg the weather gods a little more this weekend.


Chocolate Banana Honey Muffins

I've had a thing for chocolate and bananas lately. Well, to be totally honest, I always have a thing for chocolate, but the bananas have snuck in my baking quite a bit. Usually I use bananas as a means of healthifying (yes, I just made up a word) a recipe by reducing or eliminating the fat/oil called for and using mashed bananas instead. It's an easy and delicious way to make a recipe skinny. You should give a try sometime!

Skinny Pumpkin and Cream Muffins

Most of you are probably still sick of pumpkin from the overload of recipes that you saw and made for Thanksgiving. I, on the other hand, am still craving the stuff. When I find something I like, I stick with it. Notice that about my oatmeal obsession? Yes, I am a creature of habit.

I'm a huge snacker. I'd like to say that it's because I'm healthy and listen to the advice of nutritionists who say it's better to eat throughout the day and to have lots of snacks instead of actual meals, but in reality I just like to eat. And so does my body. If I don't get food every three to four hours, I get hangry (hungry and very angry). So, for everyone's sake, I always have food on me and snack a lot.

Pineapple Macadamia Nut Muffins

Welcome to Day 3 of my Greek Week celebration! (Read more here!) Today I'm featuring a recipe that uses Chobani's Pineapple Greek Yogurt. When I was brainstorming ideas of what recipes to make with each flavor of Chobani yogurt I received, I had trouble coming up with ideas of what to make with the pineapple flavor. It wasn't until I talked to my Mom about Christmas and Christmas shopping (yes, she is already starting to plan for Christmas) that it hit me to make a version of her Pineapple Macadamia Nut Bread.


Healthy Strawberry Muffins

I sure do love strawberries. I always go back and forth between choosing blueberries or strawberries as my favorite fruit. I think I'll go with strawberries for now, but that'll probably change next week. ANYWAY....my love for strawberries comes in all forms. One form that I have not tried is a strawberry muffin. This seems silly since I bake muffins all of the time. Why it never crossed my mind to add strawberries instead of blueberries, who knows. But once I saw the idea on Sally's blog, I was sold.


Banana Berry Oatmeal Cups

To say that I'm obsessed with oatmeal might be an understatement. I eat oatmeal, in one way, shape, or form, at least once a day. I'm always looking for new, fun ways to incorporate oatmeal into every day recipes, or different ways to prepare standard stove-top oatmeal. In my attempts to use oatmeal in new ways, I recently tried these Berry Oatmeal Cups from GreenLiteBites. This recipe is described as a "great breakfast idea, especially when you are on the run." How perfect since I was traveling the next day and didn't want to worry about making breakfast, or any snacks for the road.
