S'mores Oatmeal

So, did I mention that I love s'mores? And oatmeal? Because I do. Here is yet another example of my obsessions. I've combined two of my favorite foods into one recipe, and I am one happy camper!


This recipe combines all of the flavors of the traditional campfire classic into one hearty bowl of oatmeal. While this dish is on the sweet side, I won't judge you if you make it for breakfast. It is oatmeal, after all. Be sure to add the mini marshmallows and graham crackers at the very end right before you are ready to devour it; otherwise, your marshmallows will melt and you'll lose the s'mores effect. If that does happen, just add another handful of marshmallows.

S'mores Oatmeal
(1 bowl)

1/2 cup quick oats
1 cup water (or milk of your choice)
1 Tbsp unsweetened cocoa powder
pinch of salt
1-2 packets stevia (or sweetener of your choice)
1/4 tsp vanilla extract
1/3 cup mini marshmallows
2 full graham cracker sheets, crushed into bite size pieces
Optional: milk chocolate chips

Add oats, water, cocoa powder, salt, and sweetener to a microwave safe bowl. Microwave on high for 2 minutes. Stir ingredients together and microwave for 15-20 seconds longer. Stir in vanilla after oats are cooked. As soon as you are ready to eat, stir in marshmallows and graham cracker crumbs (and chocolate chips if you are adding these). Garnish with additional marshmallows and graham crackers.

Pros:
-Easy to make
-Easy clean-up

Cons:
-When the marshmallows melt, there isn't as strong of a resemblance to s'mores (so add them at the very end!)
-High in calories for an oatmeal dish
