S'mores Chocolate Chippies

If you know anything about me, you know that I'm OBSESSED with s'mores. Classic s'mores, s'mores cookies, s'mores brownies, s'mores ice cream, s'mores flavored anything. This relatively new obsession started when I was reintroduced to marshmallow fluff and all of the wonderful things you can make with it. I actually get excited whenever I see a s'more recipe (I may or may not have an entire pinterest board dedicated to s'mores). Yes it might be a problem, and no I'm not worried about it.


Knowing my obsession with s'mores, my friend Sarah recently pinned a S'more Pudding Cookie recipe off of Chef in Training. Lucky for Sarah (and myself), I decided to make these bad boys for her visit last weekend. And the entire batch of cookies was devoured in less than 48 hours. Yes, they are that good. Do yourself a favor and make these delicious, soft, chewy, yummy cookies. Even if you don't have a crazy obsession with s'mores, you will absolutely love these cookies.

S'mores Chocolate Chippies
(30 cookies)

3/4 cup unsalted butter, room temperature
1/4 cup granulated sugar
3/4 cup light brown sugar
1 3.4-ounce sugar-free instant vanilla pudding mix
2 eggs
1 tsp vanilla extract
3 sheets graham crackers, crushed
1 tsp baking soda
2 cups all purpose flour
2/3 cup mini marshmallows
1 cup semi-sweet chocolate chips

Preheat oven to 350 degrees. Prepare baking sheets by lining them with parchment paper or a Silpat mat.

In a large mixing bowl, cream together the butter and two sugars until mixture is combined. Beat in vanilla pudding mix. Add eggs, one at a time, until well incorporated. Mix in vanilla extract.

In another small bowl, mix together graham cracker crumbs, flour, and baking soda. Add the dry ingredients to the wet ingredients, mixing until just incorporated. Fold in marshmallows and chocolate chips.

Drop tablespoon size cookie dough onto prepared cookie sheet. Bake for 10 minutes, or until just turning golden brown (be careful not to over bake). Cool on cookie sheet for 5 minutes before removing to wire rack to cool completely.

  1. I have an obsession with s'mores too! I've made s'mores cupcakes, s'mores popsicles, s'mores cupcake ice cream sandwiches...but never cookies! I can't wait to try your recipe. I'm definitely going to go check out your Pinterest board too :)
