Very Berry Fluffy Pancakes

Happy Saturday everyone! I dunno about y'all, but I think Saturday mornings are pretty much the best. To me, Saturday mornings are all about sleeping in, staying in your pjs longer than usual, not having to rush out the door to get to work or school, and taking a little extra time to make a yummy breakfast. 


And these Very Berry Fluffy Pancakes make my Saturday mornings that much more special. This recipe is the first Greek Week recipe in which I'm using one of the Chobani yogurts I won in Sally's giveaway (refer to this post if you would like to read more!).


These pancakes call for Chobani's Blueberry Greek Yogurt along with fresh strawberries, making them stocked full of delicious berry flavors. Along with the awesomeness from the berries, these pancakes are super light and fluffy. Basically, these are the perfect pancakes. So go ahead and stay in your pjs, relax a bit, sip on a cup of coffee, and whip up a batch of these pancakes and have a happy Saturday!

Very Berry Fluffy Pancakes (adapted from Allrecipes)
(makes 10 3-inch pancakes)

1 cup all-purpose flour
2 Tbsp granulated sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
3/4 cup Chobani Blueberry Greek Yogurt
1/4 cup unsweetened vanilla almond milk
1/2 cup fresh strawberries, hulled and diced

Add egg to a bowl and whisk. Add yogurt and milk to egg, and whisk all ingredients together. Add dry ingredients (flour, sugar, powder, soda, and salt) to wet ingredients. Stir until just combined. Fold in diced strawberries.

Heat skillet over medium heat. Spray with cooking spray. Spoon batter into skillet. Cook pancakes until bubbles begin to appear. Flip, and cook another minute or two or until golden brown on both sides. Serve with fresh fruit, thin fruit jam, powdered sugar, or maple syrup.

Pros:
-Not your ordinary pancake!

-Can easily be doubled or tripled to feed multiple people
-Crowd pleaser

Cons:
-Not a super quick breakfast (better for weekends when you have a smidge more time)

    1. If you like berries, then you will love these! Or, if you aren't a fan of fruit pancakes, you could use Plain Chobani or Vanilla Chobani Greek Yogurt. Hope you give them a try :)

    1. Thank you!! If only every morning could be like Saturday morning.... I'm planning on making these again this weekend, but think I might try using Honey Chobani and pumpkin puree to celebrate the first day of fall :)
