Whiteout Cupcakes

Hi. It's me, Elaine. The blogger behind Cooking to Perfection. It's been a while, hasn't it? Will an easy, simple recipe that makes two beautiful, tasty cupcakes make up for my lack of posts lately? I sure hope so.


Skinny Chocolate Biscoff Muffins

We finally had a sunny, warm weekend in D.C., and I couldn't have been happier. I was finding any and every excuse to be outside and soak up some sunshine. Naturally, frozen yogurt was on that list of excuses; so was walking to Trader Joe's, strolling through Clarendon to window shop, and meeting friends at our standard spot to enjoy a few drinks on the patio. To say that I was ready to throw on my bathing suit and welcome spring with open arms is an understatement. Anddd here we are, two days later, experiencing dark, rainy, dreary weather. Guess I'll keep my bathing suit in my closet and beg the weather gods a little more this weekend.


Skinny Cupcakes

If you had to pick your absolute favorite dessert, what would it be? Tough question, right? I go back and forth between soft serve/custard/ice cream, cupcakes, and cookies. They are all soooo good. But right now my weakness is definitely cupcakes. I love how they are the perfect individual serving size, which comes in handy for people (like me) who don't like to share their desserts. Cupcakes are also an amazing dessert because of the frosting. If I could have a cupcake made to order, I'd specify that I'd like a double order of frosting with a little cake on the side. Or, better yet, just give me a bowl of homemade frosting and a spoon and I'm set.


Pumpkin Spice Cupcakes with Pumpkin Buttercream

One reason I love fall is pumpkin. I don't know what it is about the fall months, but everything just tastes better with pumpkin in it. I hope y'all are ready for some pumpkin recipes, because I'm about to go on a pumpkin baking and cooking spree! But don't worry, I'll try to throw in some non-pumpkin recipes to keep things interesting. Just considered yourself warned of the pumpkin overload coming to Cooking to Perfection.


Chocolate Peanut Butter Cupcakes

These cupcakes are to dieeee forrrrr. I don't remember how I came across this Pillsbury recipe, but I always figure a dessert with chocolate and peanut butter must be good. Well that's an understatement for these delicious cupcakes. They are rich, decadent, and full of flavor, fulfilling your chocolate, peanut butter, and cake cravings all in one. These are so good, in fact, that you don't even notice that they are a slightly healthier version of the original recipe.

Skinny Cupcakes

I've been following Hungry Girl for a while, and this is one of her best creations I've tried so far. Not only are these cupcakes really easy to make because they only have two ingredients, but they take less than 30 minutes to mix and bake AND are healthier than normal cupcakes.


The main downfall to these is that the texture is different from normal cake; these Skinny Cupcakes remind me more of a dense muffin. But when you are craving sweets and are watching your diet, this recipe will definitely come in handy.
