Low Carb Mexican Zucchini Boats

I've been having some serious Mexican food cravings lately. There is something about summertime that makes me want fresh guacamole, crispy tortilla chips, an extra large margarita, and one of my many favorite Mexican entrees. Mexican food just seems like it was made to be eaten outside, with abundant sunshine, and warm temperatures.

Easy Homemade Rice and Beans

With the holidays getting closer by the minute, I feel confident in saying that none of us have time to be slaving away in the kitchen making dinners. This time of year, every minute is crucial for planning, shopping, studying, working, traveling, or just taking 20 minutes to breathe. Whether you are a student studying for finals or a mom trying to organize all of your upcoming holiday festivities, you will appreciate this super easy and filling meal.

Crock Pot Chicken Fajitas (and FPP Reveal!)

Today is a big day for a few different reasons. First, this is my 100th entry on Cooking to Perfection! It seems like I've been blogging forever and just started yesterday all at the same time. This whole experience has opened so many doors, has been a great opportunity to learn many new things, and has been much more gratifying than I ever expected. I cannot wait to see what happens and what new things I'll learn come post number 200 or 500!

3 Layer Mexican Dip

Warm Layered Mexican Dip by My Retro Kitchen
This simple Mexican layer dip is a quick appetizer you can throw together when you have people over.  This dip is great by itself but is also a good base for adding different layers, such as refried beans, black beans, corn, onions, or queso cheese. Because this recipe calls for reduced fat cream cheese and shredded cheese, you can snack on this yummy dip without feeling too guilty. (You could even try using fat free cream cheese or reducing the amount of shredded cheese to cut the calories and fat even more.) With football season and tailgating right around the corner, this recipe will surely come in handy.

Mexican Lasagna

The title of this recipe is what initially caught my attention. Who doesn't love lasagna? And who doesn't love Mexican food? If you are one of those unique people, then this might not be the recipe for you. But if you do enjoy layers of flavors, baked in the convenience of a one dish dinner, then you've found a good recipe to try.
