Peach Pie Oatmeal

Being sick is no fun, especially in the summertime. I guess going to two concerts in one weekend will do that to you. Since I haven't been feeling that well and it's been cloudy and rainy outside, all I have wanted to do is curl up in my bed, watch movies all day, and eat comfort food. Since I can't indulge in the first two, I figure I can at least treat myself to some comfort food.


I created this recipe on a whim and am really happy with the results. This definitely hits the comfort food spot. The warm peaches are covered in a gooey cinnamon butter sauce that screams "yum!". Even if you are feeling in tip top condition, you should take advantage of peaches being in season and give this Peach Pie Oatmeal a try.

Peach Pie Oatmeal
(Serves 1)

1/2 cup quick oats
1 cup water (or you could use milk)
1 pat of butter
1 ripe peach, skin removed and thinly sliced
1/3 cup fresh blueberries
1/4 tsp cinnamon
dash of nutmeg
1-2 tsp brown sugar

Heat a skillet over medium heat. Add butter and allow to melt completely and start to bubble. Add peaches, blueberries, cinnamon, nutmeg, and brown sugar to the skillet. Toss with melted butter and allow to simmer for 5 minutes, stirring occasionally. Meanwhile, put oats and water in a microwave safe bowl. Microwave for 2 minutes, or until water is absorbed. When ready to serve, top oatmeal with sauteed peaches and blueberries.
