Chickpea Burgers with Yogurt Tahini Sauce

The title of this recipe is somewhat misleading as there is no meat used. In fact, all of my vegan followers will be happy to know that there are no animals products in this dish what-so-ever. So, for anyone who is a vegan or who is looking for a vegan recipe, you've come to the right spot!

Here is another quick, easy, and delicious dinner to add to the books! If you've seen some of my previous posts, then you are probably starting to pick up on the fact that I love chickpeas. They are a great ingredient to use in dinner recipes because they are versatile, healthy, full of fiber and protein, and cheap! With a lot of other food prices going up recently, I always like to find and purchase items that won't break the bank.

Sometimes the dough is better than the baked good. There have been times that I've found myself making a batch of cookies, fully intending on baking all of the dough, but then decide that keeping a bowl of cookie dough is a much better idea. I've also been known to buy pre-made cookie dough to eat, not bake. Don't judge me. We all have our weaknesses.


Ultimate Oatmeal for Oatmeal Lovers

If you love oatmeal as much as I do, you'll be obsessed with this creation. This recipe takes the same amount of oats called for in a regular serving, but makes nearly double the amount of oatmeal. Oatmeal lovers get that much more yummy goodness. Yes!





Dessert Overnight Oats

Anddd my oatmeal obsession continues (refer to this post to read more about it). Before I talk about this recipe, let me start off by saying that one of my new favorite blogs is Peanut Butter Fingers. This blog has a lot of great recipes and ideas for working out and staying motivated. While I was browsing the recipe section on this blog, I came across Uber Chocolaty Overnight Oats. I've been reading a lot about overnight oats on Pinterest, but haven't tried a recipe yet. Seeing a chocolate overnight oats recipe changed my mind.


3 Ingredient Healthy Pasta Sauce

SkinnyTaste is one of my favorite blogs, hands down. She has so many wonderful recipes that are delicious and good for you. I got the idea for this 3 Ingredient Healthy Pasta Sauce from SkinnyTaste's Easy Garden Tomato Sauce. I made her recipe even healthier by eliminating the olive oil and using low sodium vegetable broth to saute and steam the tomatoes. The outcome of my sauce was even better than I expected. After letting the tomatoes simmer for 30 minutes, the juice from the tomatoes is reduced and the tomato flavor is intensified. The result is a rich, flavorful, fresh tomato sauce that is way better tasting than anything you'll find in a jar, and better for you too. I can't wait to try this sauce with my Healthy Eggplant Rollatini and other Italian recipes.

Blueberry Muffin Oats

Here is a fun twist on regular oatmeal. With the addition of a few ingredients that you probably already have on hand and some fresh blueberries, you can transform plain oatmeal into a delicious breakfast. This recipe is very easy to make and is ready in under 5 minutes-perfect for you snooze button lovers who find yourselves crunched for time in the mornings. These oats are very satisfying and keep you full for hours, all while tasting like a warm blueberry muffin. Give these oats a try while fresh blueberries are still in season!

Oatmeal Raisin Cookie Oats

I get late night sugar cravings. A lot. In attempts to keep my waistline slim and bikini ready, I'm always experimenting with healthy ways to satisfy my sweet tooth. Earlier this week I was craving warm, chewy oatmeal raisin cookies. While this type of cookie is not usually that unhealthy, I didn't like the thought of turning on my oven during our insane heat wave (it was still 90 degrees at 9pm). So why not get my oatmeal raisin fix by sprucing up regular oats with spices, flavorings, and raisins?


Skinny One Ingredient "Ice Cream"

If you love soft serve ice cream and frozen yogurt as much as I do, this is a recipe you need to try. Somehow frozen banana discs that are pureed in a food processor turn into a rich, creamy whipped mixture that strongly resembles soft serve ice cream. I don't know how this is possible or how I'm just now finding out about it, but this might be my new go-to summer dessert (sorry Strawberry Banana Smoothie!).

Quinoa, Chickpea, and Avocado Salad

Quinoa is the newest cool food. If you want to pretend that you have any type of culinary knowledge, "quinoa" (pronounced "KEEN-wah") should now be apart of your vocabulary. Quinoa is the new greek yogurt, just like greek yogurt was the new sundried tomatoes. There is always a new "in" food, and quinoa is currently all the rage.


This grain has received lots of attention due to its high protein content (nutritional evaluations of quinoa indicate that it is a source of complete protein-pretty impressive for a grain!). Quinoa is also high in fiber, magnesium, iron, and calcium. Basically, this is a miracle grain.

Mexican Lasagna

The title of this recipe is what initially caught my attention. Who doesn't love lasagna? And who doesn't love Mexican food? If you are one of those unique people, then this might not be the recipe for you. But if you do enjoy layers of flavors, baked in the convenience of a one dish dinner, then you've found a good recipe to try.
