My last detox recipe--so bittersweet. I've actually been done with my detox for a few days now, but this recipe was just too easy and way too delicious not to post.

Low Carb Mexican Zucchini Boats
I've been having some serious Mexican food cravings lately. There is something about summertime that makes me want fresh guacamole, crispy tortilla chips, an extra large margarita, and one of my many favorite Mexican entrees. Mexican food just seems like it was made to be eaten outside, with abundant sunshine, and warm temperatures.
Craisin Almond Chicken Salad
I have a weird relationship with mayonnaise. The thought of mayo almost always makes me gag. It's so white, plain, and...well...fattening. If I'm ever ordering a sandwich, I always, always make sure it doesn't come with mayo on it. I'll have mustard or hummus, please and thank you. Or if I ever do find a glob of mayo on my otherwise delicious sandwich, you better believe I'm taking a napkin to that bun and soaking up every little bit of it. I think my negative feelings towards mayo started when I learned how to read a nutrition label. As soon as I discovered that little label on the side of food, I quickly eliminated a lot of ingredients and products from my diet without even thinking twice. Darn you sneaky label with almost always disappointing information.
Black Bean Hummus
Looking back, it probably would have been smart to post this dip on Superbowl Sunday for all of you party people who love hummus. I apologize for my brain fart! But hey, this recipe can give you an excuse to have people over more often. A delicious hummus recipe is just as good of a reason as any.
Roasted Curry Ginger Cauliflower
Let's talk about cauliflower. I think it's safe to say that cauliflower is not high on anyone's list of favorite vegetables. It's white, bland, and has zero pizazz. I have to admit that I never grab a cauliflower floret from a veggie tray-the carrots and broccoli are just so much prettier. And, after all, we eat with our eyes, so colors are a pretty big deal in the food world. Sorry boring, white cauliflower; sometimes the truth hurts.
Healthy Spinach and Artichoke Casserole
Know anyone who doesn't like vegetables? I'm betting that you do. And I'm also willing to bet that they are over the age of 5. I was never a huge fan of vegetables growing up, but I've learned that if they are prepared correctly and have enough seasoning and other flavorful ingredients mixed with them, vegetables can actually be pretty tasty (except peas...I despise peas). But I know a lot of people who refuse to even look in the direction of a vegetable. However, this casserole will change any picky eater's mind. In fact, I've seen first hand a vegetable hater love this dish (Hi Uncle Kenny!).
Mango Yogurt Chicken
Welcome to Day 4 of Greek Week and my first savory recipe using Chobani yogurt. As I've mentioned in the previous Greek Week posts, I used my Chobani giveaway win to challenge myself to create new recipes that use yogurt as a key ingredient. In addition to this challenge, I was also determined to find an easy and delicious dinner recipe that utilized one of Chobani's amazing products.
Summer Vegetables and Sausage
Does anyone else feel like it's already fall? I realize that technically fall does not start until September 22 this year, but I always associate the end of summer with Labor Day. (And yes...I know the exact date because I'm trying realllllllllllly hard to refrain from making anything with pumpkin until it's officially autumn.) To remind myself that we still have a few more weeks of summer left, I decided to embrace the fresh produce that will soon be limited in the cooler months. So on my last trip to the grocery store, I grabbed just about every fresh vegetable and fruit available.

Roasted Asparagus with Healthy Hollandaise Sauce
Asparagus is one of those vegetables that I love to eat, but I am not familiar with many different ways to prepare it. I usually steam asparagus and serve it with my entree. This is fine every once in a while, but not my idea of the perfect side dish. When I saw that asparagus was on sale at my local grocery store, I grabbed a pound and challenged myself to find a new way to cook this vegetable. I thought about maybe adding it to a salad, mixing it in with quinoa, or adding it to scrambled eggs with other vegetables. But none of those options seemed really appealing, so I kept putting off making the asparagus. While I was heating up some leftovers tonight, it dawned on me to roast the asparagus and serve it with a Hollandaise sauce. But there was one problem: Hollandaise sauce is a treat to your taste buds, but not to your waste line. So a little light bulb went off in my head to make a healthy Hollandaise sauce. And believe it or not, I think I like the healthy version better!

Healthy Eggplant Rollatini
This is one of my new favorite creations, hands down. I originally got the idea to substitute eggplant for lasagna noodles from my trusty source, Pinterest. While I was browsing Pinterest (which happens entirely too often), I stumbled across this Eggplant Rollatini Kraft recipe. It looked good enough and received high reviews, so I added it to my pin board.
Basic Stir Fry
This is one of my standard week night recipes. I usually don't get home until 6:30 and am starving, so the last thing I want to do is spend a lot of time in the kitchen; the first thing I want is a very quick and satisfying dinner. This Asian stir fry is just that.
No Noodle Lasagna
Lasagna is one of my all time favorite Italian dishes. I love how the layers are delicious by themselves, but bake together to make a harmonious one-dish meal. Traditional lasagna, however, can be rather caloric depending on the ingredients that are used. One way to lighten up this dish is to substitute fresh zucchini or eggplant for the noodles.
