Y'all know that feeling of pure happiness when you discover something amazing? Like when you try on the perfect pair of jeans that give you Gisele legs; or when you discover a new book, artist, or band so moving and talented that you are speechless; OR when you find the best peanut butter cookie recipe on the face of this planet? Well, ladies and gentlemen, the latter happened and it made my day.
Thanks to Sally at Sally's Baking Addiction, I have fallen in love with this recipe. This peanut butter cookie is unlike any other peanut butter cookie you've ever had. These cookies are so soft and chewy that they literally melt in your mouth. And there is no lack of peanut butter flavor. In fact, there is almost an entire cup of peanut butter in this recipe, so all of you peanut butter fanatics will be satisfied.
And for all of you who love dipping their apples in peanut butter, these cookies have your name written all over them. Sweet, crisp apples are the perfect complement to rich and creamy peanut butter, so why not add diced apples to peanut butter cookie dough? Bingo, perfection! Now I love my sweets and usually have a hard time controlling my sweet tooth, but I had ZERO control after baking these cookies. I challenge anyone who tries these cookies to stop at just one. I would bet money that you can't. And that's quite alright, because you will be experiencing total bliss with each and every bite.
(about 2 dozen cookies)
1/2 cup unsalted butter, room temperature
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
3/4 cup creamy peanut butter
1 egg
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 large apple, finely diced
Add butter, brown sugar, and granulated sugar to a large mixing bowl. Cream ingredients together. Add peanut butter to creamed ingredients and mix in. Add egg and vanilla extract and mix until fully incorporated. Add flour, baking soda, and salt; mix until just incorporated, careful not to over mix. Fold in diced apples. Chill cookie dough in refrigerator for 30 minutes.
Preheat oven to 350 degrees. Spoon tablespoon size cookie dough onto cookie sheet. Bake for 9-10 minutes, or until cookies just begin to turn golden brown. Remove from oven and cool on cookie sheet for a few minutes before removing to wire rack to cool completely.

The peanut butter definitely shines through in these cookies, while the apples give it a slight sweet, fruity flavor. But if you are a fan of soft, chewy, peanut butter cookies, you should definitely try these and mix in your favorite ingredients! (But I highly recommend apples! :])
