Avocado Hummus from C+C Marriage Factory |
(Serves 8-10)
1 16-ounce can chickpeas, drained
2-3 ripe avocados, pitted and sliced
Juice of 1 lemon
2-3 tsp minced garlic
1/4 cup water
1/8 tsp cumin
salt and pepper to taste
3 Tbsp olive oil
Cilantro and paprika to garnish
Place chickpeas, avocados, lemon juice, garlic, and water in a blender. Pulse until blended. Add cumin, salt, and pepper. Pulse to combine; taste and adjust seasonings as necessary. Keep blender on and slowly drizzle in olive oil. Continue blending until ingredients are combined and the hummus has a smooth consistency. Put hummus in a serving bowl, garnish with cilantro and paprika, and serve with pita chips and vegetables.

Tried this recipe. Left out the water and only used 1/2 tsp of garlic (can't do much garlic- tummy issues). This is AMAZING. Thank you so much for posting. Wonderful fresh twist on both guac and hummus!
